How I Cured My Aches and Pains


I hurt my neck the other day. I could barely move and was taking ibuprofen like crazy and smelled of Tiger Balm. All I wanted to do was lay in bed, but I couldn't because I was not able to get back up (Who knew you used your neck muscles to get out of bed?). When I did lay down, I had to roll out of bed and hope I landed on my hand and knees to get back up.

To stay busy and help manage the pain, and as a reason to cave in to recent cravings, I decided to make my favorite brownies. After stirring, baking, and then finally eating them, I certainly did feel better. I'm not sure if it was the cold packs, hot packs, or pain killers, but I'm giving all the credit to sweet tooth gratification.

Sure, my neck is still sore, but I've got some amazing brownies to help me feel better!


Fudgey Brownies
4 large eggs
2/3 c white sugar
1/3 cup honey
2/3 cup brown sugar
8 oz melted butter
1 1/4 cup cocoa powder
2 t vanilla extract
1/2 t kosher salt
1/2 cup flour
1/4 cup semi-sweet chocolate chips

*Preheat oven to 300 degrees. Line a 8"x8" baking pan with parchment paper, or grease with butter.
*In a large bowl beat eggs until frothy and lightened in color. Add white sugar, honey, and brown sugar. *Whisk until smooth. Whisk in melted butter, cocoa powder, vanilla, and salt. Mix until smooth.
*With spatula, fold in flour until just incorporated. Sprinkle chocolate chips evenly over the top.
*Pour into prepared baking pan and place in oven.
*Bake approximately 45 minutes or until a toothpick inserted in center comes out clean. Let cool for at least 1 hour before eating.

  2. OH I think I will fake a muscle spasm today to give me an excuse to try those tasty little guys! (wink) I hope you get to feeling better! Neck aches are horrible!
